Dr. Mowery, Ph.D. and his colleagues found that xanthine compounds in Yerba Mate` are very similar to the xanthines found in caffeine. Although the xanthines have similar chemistries, each has a unique set of properties, concluding that even if there was caffeine in Mate, the amount would be so tiny that it would take 100 tea bags of Mate in a 6-ounce cup of water to equal the caffeine in a 6-ounce serving of regular coffee.
Recent U.S. studies claim yerba mate does contain caffeine. It just contains a much lesser amount, pound for pound, than that of all other similar plant beverages. The caffeine content of yerba mate has been assayed to contain between .7 and 2%, with the average leaf yielding about 1% caffeine. In living plants, xanthines (such as caffeine) are bound to sugars, phenols, and are set free or unbound during the roasting and/or fermenting processes. The mateine chemical “discovered” is probably just caffeine bound to a tannin or phenol in the raw leaf. The same would tend to hold true with green tea.

Is Cheia Vida Pasteurized?
Traditional pasteurization does not involve "superheating" a liquid. That process is called ultra high temperature pasteurization (or UHT), which is the method used to produce cartons of milk that can be stored unopened at room temperature for long periods. It has been suggested that the UHT process can denature or degrade proteins, enzymes and vitamins, and that's why UHT is one high-tech solution that we will not use. Instead, we use a new twist on the gentle, time-tested method originated by Louis Pasteur in 1862.
The temperature used for pasteurizing Cheia Vida might be uncomfortably warm for a bubble bath, but its well under the point at which nutrient degradation would take place. We control the process by pasteurizing only one batch of Cheia Vida at a time, quickly bringing the product to the prescribed temperature of 180°F by circulating heated water through an insulating jacket in our double-walled stainless steel kettles. The batch is held at the pasteurization temperature for a mere five minutes, which is all that is required to suppress microbial growth. Once pasteurization's been achieved, we chill. That doesn't mean we take a break; it means that we flood the insulating jacket with frigid water, all the while stirring the kettle to rapidly chill the product. This unique quick-chilling step ensures that Cheia Vida retains its fresh flavor and aroma, with no "cooked" notes.
